Beaujolais-born Gilles Paris is in our estimation one of the rising star producers in all of Beaujolais. After making wine for his in-laws in a cooperative, he decided to set out on his own in 2005, and he made his first cuvee with the support of Marcel Joubert. Today, Gilles grows and makes wines from his 8 hectares in Chiroubles, Fleurie, and Morgon. He farms organically, uses native yeasts, and adds just a tiny bit of SO2 at bottling.

Chiroubles is the highest elevation of all of the Beaujolais Cru Villages, and Gilles owns a small plot of vines that are 75+ years-old. These old Gamay vines result in a wine that has good power and structure while still maintaining lovely freshness and energy. Beautiful notes of ripe dark cherry, raspberry, pink peppercorn, violet, and forest floor inform the nose and palate here. Great potential for development too!
